Searcys Champagne

Champagne has been part of the Searcys story since 1893, when our own label first appeared. More than 130 years later, it remains at the heart of what we do.

Our Searcys Selected Cuvées are served by the glass and bottle across our venues, including here at St Pancras. Made exclusively in Épernay by a fourth-generation Chef de Caves, our Brut and Rosé Champagnes are given time to develop through extended ageing on lees, resulting in wines with elegance, balance and depth.

Sparkling wine, classic bottles and house signatures

Champagne is just the beginning. Our drinks collection brings together classic wines, contemporary discoveries and Searcys signatures.

Our English Sparkling Wine, produced at the acclaimed Greyfriars Vineyard, offers a distinctly British take on traditional sparkling wine. Made with a focus on quality and sustainable winemaking, it’s a refined alternative to Champagne and a natural fit for the setting. Alongside it, our wine list brings together bottles from classic regions and newer producers, chosen to complement the food and suit every kind of occasion, from a quick glass at the bar to a long lunch or dinner.

Distilled with character

Our London Dry Gin takes inspiration from Victorian-era flavours and is made using a three-part process of traditional distillation, vapour infusion and a botanical tea blend. Finished with honey from Searcys’ own beehives, it has a smooth, rounded character with delicate floral and herbal notes.

Our premium rum takes a different route. Distilled from Caribbean sugar cane, aged for five years and finished in bourbon oak casks, it is rich, warming and full of depth.

Together, these house signatures reflect the same approach that has shaped Searcys for generations: quality ingredients, considered craft and a genuine love of what goes into the glass.
